Kick-Butt Turkey + Mixed Greens Mediterranean Salad

I have a love for all things Salad… someone says Salad, I say Heaven!  It’s amazing how much you can do with the never-ending amount of vegetable resources on this planet to create the most delicious masterpieces of complete Nutrition in one meal.  Today, I decided to go with my instincts and prepare a Mediterranean ensemble but with added Goodness.

Kick-Butt Turkey + Mixed Green Mediterranean Salad
Yield 4 Servings

1/2 bag Mixed Greens
1/2 bag of Spinach
1/2 chopped Red Pepper
1/2 cup Mushrooms
1/2 cup Artichokes (well-drained)
Cup of baby Tomatoes
1 cold Turkey Breast (cubed) – {baked tofu as alternative}
1/2 cup of diced Olives (well-drained)
1/4 cup fresh Feta
1/2 cup chopped Brocoli

Mix all the ingredient in a large bowl, careful to not over toss the feta, but just enough so that everything is combined.  Serve in salad dishes, and sprinkle 1/4 cup of Sesame Seeds over top (or as desired); top with low fat Italian Dressing!

Tip: Pre-cut ingredients are also a creative way to help your kids love their veggies!  Opt to maybe add fruit as a side, along with some more nut varieties.  Any of the above ingredients can also be subbed out with just about any kid friendly alternatives like peas, corn, carrots, cucumbers, but what truly makes Salad creating magical is giving them full reign over CHOICE!  Its their very own personal Buffet!  Try it!
